Pilaf with chicken is very tasty, and most importantly, an easy-to-prepare dish. It can be prepared both for a holiday and for an ordinary family dinner.
It is necessary
- - 50 g butter
- - 4 diced chicken breast fillets
- - 3-4 tbsp. l. curry paste
- - 1 onion, thinly sliced
- - 2 sweet peppers, chopped (red and green)
- - 250 g basmati rice
- - 1 cube of chicken stock (crumble)
- - 300 g spinach (chop large leaves)
- - 2 tbsp. l. chopped cilantro
- - salt and ground black pepper
- - 1-2 tbsp. l. toasted almonds
Instructions
Step 1
Melt the butter in a wok or large skillet. Add chicken, curry paste and onions. Fry over medium heat, stirring occasionally. 5-8 minutes before the chicken is done, add the peppers and cook for another 2-3 minutes until tender.
Step 2
Add the rice and cook for 1-2 minutes, stirring to distribute the seasoning evenly over the grains. Pour in 600 ml boiling water and add the bouillon cube.
Step 3
Reduce heat and cook for 15-18 minutes, stirring occasionally. If the liquid evaporates too quickly, add water.
Step 4
When the rice is tender, add the spinach and cook for another 1-2 minutes, stirring occasionally, until the leaves are soft. Add cilantro, salt and pepper to taste. Sprinkle with almonds before serving.
