A fragrant plum cake with sweet dough and slightly sour filling is a great dessert for the whole family. It is very easy to prepare and quickly baked, suitable for both family and holiday tea drinking.

It is necessary

  • For the test:

  • • 250 g of wheat flour;
  • • ¼ packs of butter;
  • • 100 g of cane (can be replaced with regular) sugar;
  • • 4 teaspoons of 15% sour cream;
  • • 5 g baking powder for dough.
  • For filling:
  • • 250 g ripe plums;
  • • 10 g of potato starch;
  • • 50 g of sugar.

Instructions

Step 1

Pour sifted flour, baking powder, cane sugar and a pinch of salt into a small cup. Add butter there, mix everything and grind into crumbs with a fork. In the absence of cane sugar at home, you can use regular sugar for cooking.

Step 2

Drive an egg into flour crumbs and pour in sour cream. Replace the elastic and soft dough, roll it into a ball, wrap it in cling film and put it in the refrigerator for 10 minutes.

Step 3

Wash and dry the plums with kitchen paper towels, cut into 2 halves, remove seeds. Cut all halves into slices. Note that plums are best taken dark blue, ripe and sweet. For example, the "Hungarian" variety is well suited.

Step 4

Combine and mix sugar and starch in one container.

Step 5

Thoroughly coat a baking dish with butter, then sprinkle with flour. Remove the dough from the refrigerator, unwind and roll out into one cake so that it is larger in diameter than the baking dish.

Step 6

Place the dough in a mold, beat with a fork and level with your hands, forming as high sides as possible. Place the plum slices in a circle from the edge of the mold and towards the center on the dough base. Sprinkle plum filling with plenty of starch-sugar mass.

Step 7

Place the formed pie for 20-30 minutes in a hot oven preheated to 180 degrees.

Step 8

Remove the finished cake with plums from the oven, cool, decorate with mint leaves if desired.
