- Raspberry sorbet:
- - raspberries 300 g;
- - water 150 ml;
- - 1/2 lemon juice;
- - sugar 180 g;
- - a pinch of vanilla sugar.
- Mint Ice Cream:
- - cream 20% 700 ml;
- - yolk 4 pcs;
- - sugar 120 g;
- - mint 6 branches;
- - chocolate chips 2 tablespoons

Step 1
Raspberry sorbet
For raspberry sorbet, pour water into a saucepan, add sugar and vanilla sugar and put on medium heat. Bring to a boil and cook without stirring for about 7 minutes. Allow to cool completely. Sort the raspberries, wash, dry and grind in a blender and strain to remove the seeds.
Step 2
Combine raspberry puree and lemon juice with syrup, mix thoroughly. Pour the sorbet into a plastic container and put it in the freezer for 3-4 hours until it solidifies completely. Remove sorbet from the freezer and stir every 30 minutes. Serve in bowls or glasses, garnished with mint leaves.
Step 3
Mint ice cream
Tear off the leaves from the mint sprigs and grind them in a blender with 50 ml of cream to a state of gruel. Heat the remaining cream. Beat the yolks with sugar until a light creamy mass. Continuing to beat, pour in a thin stream of mint mixture, then cream.
Step 4
Pour the yolk-butter mixture into a saucepan and heat over low heat (but do not boil) until the mixture thickens. Allow to cool, add chocolate chips and stir. Place in the freezer for 4 hours.
