Prepare the original version of the famous French pastry, complementing the fatty puff pastry with delicate almond cream.

You will need:

- 250 g of puff pastry;

- 75 g of almonds;

- 50 g butter;

- 2 egg yolks;

- 1 tbsp. a spoonful of cream;

- 20 g flour;

- 75 g of sugar;

- 1 teaspoon of brandy;

- 2-2 drops of vanilla essence;

- egg for lubrication.

Scald the almonds with boiling water, peel and grind the nuts in a blender. Whisk the butter, egg yolks and sugar until the crystals are completely dissolved. Add cream, flour, brandy and ground almonds. Continue whisking the cream until smooth.

Roll out the thawed dough into a layer in the form of a circle. Cut it into 6 segments. Lubricate the triangles with almond cream and roll from the wide end to the narrow end, giving the product a croissant shape. Arrange the blanks on a baking sheet greased with flour, grease each product with a beaten egg and a couple of drops of vanilla essence. Bake in an oven preheated to 220 ° C until golden brown.

Instead of almond cream, the croissants can be stuffed with thinly rolled marzipan.

Fast pizza

Puff pastry can be used to make delicious crispy pizza.

You will need:

- 300 g of puff frozen dough;

- 200 g mozzarella;

- 2 tablespoons of tomato sauce;

- 150 g lean ham;

- 100 g of canned mushrooms;

- a handful of pitted olives;

- freshly ground black pepper.

Defrost the dough, roll it into a layer and place on a greased baking sheet. Cut the olives into slices, the mushrooms into thin slices and the ham into strips. Brush the dough with tomato sauce, spread the mozzarella cut into small cubes over it. Spread the ham, olives and mushrooms on top. Bake the pizza in an oven preheated to 220 ° C. Sprinkle freshly ground black pepper over pastries before serving and cut into portions.

Crescent moons with sausages

These crescents will be a great alternative to the usual sandwiches. They can be served with breakfast or dinner, or taken with you for a hearty snack.

You will need:

- 350 g of puff pastry;

- 50 g soft cottage cheese;

- 1 clove of garlic;

- 1 tablespoon of chopped parsley;

- 230 g of sausages;

- 1 egg;

- 2 tbsp. tablespoons of sesame seeds.

Defrost the dough and roll it into a thin layer on a floured table. Cut the dough into squares, each diagonally divided into 2 triangles. Chop the garlic, mix it with cottage cheese and herbs.

An alternative to a mixture of cottage cheese with garlic is any soft cheese.

Put a portion of the curd mixture on each triangle, spread it with a knife. Place the sausage on top and gently wrap the dough, making the product look like a crescent moon. Arrange the puffs on a baking sheet, brush with beaten egg and sprinkle with sesame seeds. Bake the products at 200 ° C until golden brown. Serve crescent moons with crispy green salad.
