Along with the Olivier salad, herring under a fur coat is considered an obligatory attribute of the festive table. There are many variations of this popular flaky salad, the classic recipe for which includes herring fillets and boiled vegetables: potatoes, carrots, beets.
How to cook a classic herring under a fur coat
It would seem that the classic recipe for "fur coat" has long been known to everyone. However, many housewives successfully adjust it by swapping layers or adding new ingredients, which gives the salad a new flavor. To prepare the classic recipe for herring under a fur coat, you will need:
- 1 large herring;
- 3 potatoes;
- 2 carrots;
- 2 beets;
- 1 head of onion;
- mayonnaise.
Wash the vegetables very thoroughly (potatoes, carrots, beets) and boil without peeling them. When the vegetables are ready, drain the water, and cool the vegetables and grate separately on a coarse grater. Cut the herring into fillets, remove the skin and bones. Then cut the cooked herring fillet into small cubes. Peel the onions and chop with a knife, then scald with boiling water, then squeeze lightly.
Moisten the bottom of a plate, herring or salad bowl with water and lay out the herring in an even layer, on top of which spread the onions. Then generously brush the layers with mayonnaise. Put the potatoes on top and coat it with mayonnaise, then carrots and lay the top layer on the beets, which are well greased with mayonnaise. You can decorate the salad with sprigs of herbs, as well as roses made from carrots and beets. Before serving, the herring under a fur coat must be placed in the refrigerator for several hours (or better overnight) for impregnation.
Little tricks of a delicious "fur coat"
Onions for herring under a fur coat can be scalded with boiling water, or you can pre-pickle in vinegar. To do this: chop the peeled onion with a knife, transfer to a deep bowl and cover with water. It should cover the onion layer. Then add a tablespoon of 9% vinegar and let the onion marinate for 15 minutes.
Additional layers of fresh apples or hard-boiled eggs do not contradict the classic herring recipe under a fur coat. These components must also first be grated on a coarse grater. The apple / egg layer is placed on grated potatoes, greased with mayonnaise.
To spice up the salad, some housewives add finely chopped pickled cucumbers, which are placed between the egg and carrot layers.
The "fur coat" looks very original if the layers are laid out as follows: 1st - grated beets, 2nd - carrots, 3rd - potatoes, then herring fillets cut into small cubes, on top - chopped and scalded or pickled onions, and then vegetable layers are laid out in reverse order - potatoes, carrots, beets. Do not forget to grease each layer with mayonnaise. You can decorate the salad with a boiled egg grated on a coarse grater; you do not need to smear it with mayonnaise.
