Now there is a need to sort out all the actual salads for the New Year. Forget about "Herring under a fur coat" is not worth it. Why under a fur coat? According to the classic recipe, the salad is laid out in layers and the herring is used first. On top of it are laid vegetables that cover the fish. That's the whole principle of "fur coat".
Ingredients:
- lightly salted herring 1 pc,
- carrots 1 pc,
- medium beets 2 pcs,
- medium potatoes 4 pcs,
- eggs 1-2 pcs,
- onions 1 pc,
- mayonnaise, salt to taste
- vinegar nine percent half a teaspoon.
Preparation:
- Take a deep saucepan, put all the vegetables in it and boil them.
- Boil the eggs in a separate saucepan.
- After the vegetables and eggs are cooked, cool and peel them.
- Start cutting herring. Better to lay on the work surface of the newspaper or backing, so as not to get dirty. Remove entrails, bones and fins from the fish.
- Coarsely grate the potatoes and place half on a plate in the first layer. Salt a little and brush with mayonnaise.
- Chop the herring finely and lay on top of the potatoes. Drizzle with mayonnaise again.
- Peel the onions and cut into small cubes. Lay out in third layer. You can first scald it with boiling water to remove the bitterness. Brush with mayonnaise.
- Grate the carrots with a coarse grater and place in a fourth layer. Brush with mayonnaise.
- Lay the remaining potatoes on top, salt them a little and add mayonnaise.
- Grate the beets. Place on top of the potatoes. Brush with mayonnaise and garnish.
Cooking tricks:
- All vegetables must be boiled in a peel in order to preserve vitamins and nutrients. Plus they won't fall apart when cut.
- Vegetables can be wrapped in foil and baked in the oven. This will give them a richer taste.
- It is better to chop vegetables on a grater, and not with a knife, as they will be airy.
- For more airiness, you can grate vegetables by weight. Just be careful.
