This strawberry meringue cake is composed of layers of delicate whipped cream, fresh strawberries and homemade meringue cakes. An ideal option to diversify your summer menu, because it is in the summer that the tables are bursting with strawberries.

Step 1
Preheat oven to 180 degrees. Place the nuts on a dry baking sheet and dry them in the oven for about 10 minutes. Stir the nuts occasionally. When you see that the nuts are fried and you feel a pleasant aroma, take them out of the oven. Do not turn off the oven, just turn it down to 120 degrees.
Step 2
It is necessary to prepare a baking dish for cakes; for this, line it with parchment paper. Put pecans, starch, salt and half a cup of sugar in a blender. Grind the nuts until finely ground.

Add tartar to the whites and beat until foamy, then gently add a glass of sugar and beat until a glossy mixture with good non-falling peaks. Add half of the nut mixture to the egg whites, stir very gently, then add the second half of the nuts.

Spoon the mixture gently into the mold, you should divide it into about four cakes.

Each cake is baked for about an hour at a temperature of 120 degrees. After that, turn off the oven, but do not take out the cakes, leave them there for another 2-2.5 hours. The finished meringue should be dry and not sticky to your fingers.
Step 6
For the cream, combine the mascarpone cheese and vanillin until smooth. Whip the cream and add half a cup of sugar to it. Add the whipped cream to the mascarpone.
Step 7
Carefully remove the crust from the parchment paper, brush it with cream, and then cover with a layer of berries. Repeat the layers, decorate the top of the cake with halves of strawberries.
