Meringue is a light meringue made from beaten egg whites with sugar. Combined with a delicious and popular dessert like cheesecake, the meringue takes on a whole new flavor. For the recipe, it is better to take fresh strawberries - there is no need for excess moisture from frozen berries in the dessert. And you can buy any meringues, but it is better to take vanilla or strawberry ones.

It is necessary

  • - 1 kg of mascarpone cheese;
  • - 400 g fresh strawberries;
  • - 20 pcs. meringue;
  • - 15 g of gelatin;
  • - 3 eggs;
  • - 2 tbsp. tablespoons of sugar;
  • - 2 tbsp. spoons of starch;
  • - 1 tsp vanillin.

Instructions

Step 1

First, prepare the strawberries, rinse them, dry them, peel them of the stalks. Puree the strawberries in a blender, leave a few whole berries to garnish. Pour sugar in mashed potatoes, beat again.

Step 2

Pour gelatin with 4 tbsp. spoons of cold water, let it stand for 5 minutes, then pour 150 ml of boiling water, stir. Add gelatin to strawberry puree, whisk. Put in the refrigerator for 30 minutes, the mass should thicken.

Step 3

Mix mascarpone with starch, eggs, beat until smooth.

Step 4

Cover the form with parchment, pour the crumbled meringues into it, fill it with the cheese mixture.

Step 5

Bake the cheesecake for 10 minutes at 200 degrees, then reduce the temperature in the oven to 50 degrees, cook for another 40 minutes. After turning off the stove, do not take out the dessert for another 10 minutes.

Step 6

Then take out the dessert, let it cool in the form, put the strawberry mass on top, flatten, cover with foil, put in the refrigerator overnight.
