The gifts that nature presents to us are very tasty and healthy, but, unfortunately, they have a limited shelf life. Therefore, in order to extend the period of enjoying them until the next harvest, you can make preparations for the winter.
It is necessary
- For eggplant with vegetables:
- - 3 kg eggplant;
- - 3 kg of bell pepper;
- - 1.5 kg of carrots;
- - 2 heads of garlic;
- - 1 bunch of dill and parsley;
- - 0, 5 tbsp. tablespoons of vegetable oil;
- - 1 tbsp. a spoonful of salt.
- - 2 liters of water;
- - 4 tbsp. tablespoons of salt;
- - 4 tbsp. tablespoons of sugar;
- - 240 ml of 9% vinegar.
- For royal jam:
- - 2 kg of quince;
- - 2 cups shelled walnuts;
- - 2 kg of sugar;
- - 2 glasses of water.
Instructions
Step 1
Eggplant with vegetables
Rinse the eggplants, cut into 6-8 pieces and put in a large container. Pour 1 tbsp here. a spoonful of salt, mix well and leave for 1-2 hours so that the bitterness is gone from the vegetable. After the specified time, you should rinse them under cold water and discard in a colander so that the water is glass.
Step 2
Take a large cauldron, pour in 0.5 tbsp. tablespoons of vegetable oil and fry on it in small portions in order: carrots until soft; peeled from seeds, washed and cut into 4-6 pieces of bell pepper within 5 minutes; eggplant until golden brown.
Step 3
Put the overcooked vegetables in sterilized jars up to the shoulders, sprinkling alternately with finely chopped garlic and chopped herbs. Pour the marinade made from water, salt, sugar and vinegar over the contents of the jars. The output will be 10 cans with a volume of 0.7 liters.
Step 4
Tsar's jam
For tea drinking on cold evenings, quince and walnut jam is well suited, which turns out to be very tasty and aromatic. For him, the first step is to boil the syrup from water and sugar. Then rinse the quince, peel and remove the seeds, cut into small pieces. Fill them with boiled syrup and leave for a day.
Step 5
Put the soaked quince on gas, bring to a boil and leave again for a day. After this time, boil the jam again and cook over low heat. 10 minutes before cooking, add coarsely crushed walnuts here.
Step 6
If the drop of jam does not spread over the saucer, then it is ready. Pour it into hot sterilized jars and roll it up. Turn upside down until cool.
