Step 1

Make homemade marshmallows. To do this, pour sugar into a small saucepan, add 2/3 cup of water, mix everything well and put on low heat. Cook for 7 minutes after the syrup starts to boil. Pour the gelatin into a small bowl, cover with cold water and leave to swell. After 20 minutes, place the gelatin dish in a water bath and heat, stirring continuously, until completely dissolved. Add gelatin, baking soda, citric acid, a little vanillin, and a little dye of your choice to a saucepan of syrup. Beat everything well with a mixer. This process will take 10-15 minutes. Put the finished mass in a prepared pastry bag or small bag, rolled up of waxed paper and place the marshmallows on a baking sheet lined with parchment. After 2-3 hours, the dish is completely dry and ready to eat. Cut the finished marshmallow in half lengthwise to form thin slices.

Step 2

Favorite fruits such as bananas, kiwi, pineapple, pear, apple, cut into thin circles or wedges. Cut the pineapple into half rings.

Step 3

Heavy cream (suitable with a fat content of 30% or more) beat well with a mixer to make a fluffy cream. Add a small amount of caster sugar to taste. Place the whipped cream in a pastry bag and refrigerate to set.

Step 4

Assemble the dessert on a flat dish, spreading layer by layer of marshmallow-fruit-cream. The top layer should be cream. Grate the chocolate on a fine grater and sprinkle the finished airy cake on all sides. Place the dish in the refrigerator for 1 hour.
