Fried zucchini is a very healthy dish, it is considered a dietary one. It is very easy to prepare it at home, the ingredients are available and inexpensive. Serve it as a side dish or as an appetizer with garlic sauce. There are special techniques in cooking, observing which you will always get amazing zucchini.
This is a recipe for classic homemade zucchini with garlic sauce. Such zucchini is also served hot, as a side dish, or an appetizer. If they have cooled down, they are also very tasty when cold.
To prepare 4 servings, we need:
- Zucchini 800 g.
- Salt, ground black pepper
- Refined vegetable oil 100 ml.
- White wheat flour 250 g.
- Garlic 4 cloves
- Mayonnaise or fatty sour cream 200 g.
- Greens 1 small bunch
Preparation for cooking
It is important to use small squash. Small zucchini are younger, they are tastier, do not have a hard crust and hard seeds. With young zucchini, the texture of the dish will be more delicate.
We cut the zucchini into rings 1 cm thick.
If the fruits are very small and thin, then cut them diagonally into ovals or even lengthwise. This will reduce the amount of work, as there will be fewer pieces.
Next, sprinkle the zucchini with plenty of salt and season with a little pepper. Then put in a colander, where the juice will drain from them. This is necessary so that the flour adheres to the pieces better.
We start to fry
Put a pan with a flat bottom over medium heat. It is advisable to fry all the time over medium heat. Pour 50 ml (shot glass) of vegetable oil into the pan or 100 ml if the pan is large.
Take a large container, such as a bowl, and pour the flour into it.
After the zucchini has drained, put them in several pieces (4-5) in flour and roll in it on all sides. We wait a minute (without removing the zucchini from the bowl) and once again roll in flour. You need to breaded twice, because if you breaded once, the flour will be saturated with moisture and will begin to peel off the zucchini.
Put the double-breaded zucchini in the pan, and put the following zucchini in the flour and bread them the same way.
Fry the courgettes for about 2 minutes on each side, until they are pleasantly golden brown.
Garlic Sause
Peel the garlic and squeeze it through a garlic press, if it is not there, then chop the garlic very finely.
My greens and chop finely.
Mix well with mayonnaise, or sour cream, all the ingredients with a tablespoon.
Taste and add salt if required.
