Avocado salad with fish
This light, nutritious snack only takes half an hour to prepare. To make two servings of salad, you will need the following ingredients:
1 small avocado
1 tbsp lemon juice;
1 pickled cucumber;
1 bell pepper;
150 g of boiled pink salmon;
50 g sour cream;
1 tbsp chopped dill;
· Salt, ground pepper to taste.
Wash the avocado and cut it in half, remove the pit. Using a sharp knife, carefully cut out the flesh so that the rind remains intact. Cut the pulp into small cubes, pour over half of the lemon juice. Peel and finely chop the onion. Cut the cucumber and peppers without seeds into cubes. Divide the fish fillet into pieces.
Finely chop the dill, mix it with sour cream, the remaining lemon juice, ground pepper and salt. Combine the resulting sauce with the rest of the ingredients, put in avocado rind “boats” and serve.
Baked Avocado Chicken Salad
The flesh of avocado goes well with chicken meat. The salad turns out to be especially tasty, wrapped in unleavened cakes and baked in the oven. To prepare a dish, take:
1 avocado
1 tbsp lemon juice;
1 sprig of parsley;
80 g of natural yogurt;
150 g cherry tomatoes;
1 sweet pepper;
1, 5 onions;
50 g canned beans;
· 2 thin cakes;
100 g smoked chicken fillet;
75 g grated cheese;
· Salt to taste.
Peel and dice the avocado, drizzle with lemon juice and combine with finely chopped parsley. Then combine the resulting mixture with yogurt, salt and whisk in a blender.
Cut the bell peppers into small pieces. Divide the cherry tomatoes into quarters. Cut the onions into thin rings. Throw the beans on a sieve to glass excess liquid, cut the chicken into thin slices.
Combine chicken and vegetables with avocado sauce. Put the mixture on the tortillas, sprinkle with grated cheese. Wrap the cakes, transfer to a baking sheet and put in an oven preheated to 200 ° C for ten minutes.
