Chuchvariki is a traditional Uzbek dish made from lamb, but if you wish, you can also cook it with pork.
It is necessary
- For the test:
- - 200 g flour;
- - 100 g of water;
- - salt.
- For the sauce:
- - 1/2 carrots;
- - 1 bow;
- - 3 tomatoes;
- - 400 ml of water.
- For filling:
- - 150 g lamb (pork);
- - 1 clove of garlic;
- - salt pepper;
- - 1/2 onion;
- - 1 teaspoon of coriander;
- - dill, parsley, cilantro.
Instructions
Step 1
Make a dough: mix all the ingredients, knead the dough, covered with cling film, place in the refrigerator for 30 minutes.
Step 2
Prepare the minced meat: cut the meat into small pieces, grind them in a meat grinder along with onions, garlic, mix everything and add salt, spices.
Step 3
Roll out the dough thinner, fold it and cut it across, divide into 4 cm squares.
Step 4
On each square, lay out the minced meat, fold the square into a triangle, interlocking the two edges through your finger.
Step 5
Prepare the sauce: finely chop the onion and grate the carrots on a coarse grater, peel the tomato and chop it into cubes (you can replace it with a tomato).
Step 6
Fry the onions and carrots for 10 minutes, then add the tomatoes, simmer for 5 minutes over medium heat, salt, put the sculpted chuchvariks, add water and simmer for 15-20 minutes with the lid closed.
