A salad of fresh vegetables and pickled mussels not only has a pleasant unusual taste, but is also very healthy.
It is necessary
- - peeled mussels (500 g);
- - eggs (3 pcs.);
- - tomatoes (3 pcs.);
- - Bulgarian pepper (2 pcs.);
- - olive oil (50 g);
- - garlic (4 cloves);
- - wine vinegar (2 tablespoons);
- - black pepper (1/3 tsp);
- - parsley or celery.
Instructions
Step 1
Defrost the peeled mussels and rinse them thoroughly under running water. We put it in a bowl in which we will marinate the mussels.
Step 2
Cooking the mussel marinade. Put chopped garlic and finely chopped bell pepper in a preheated frying pan with olive oil. Fry for 10-15 minutes, stirring often.
Step 3
Turn off the pan, add wine vinegar, salt and pepper. Mix well. Pour mussels with the resulting warm marinade and leave for 2 hours.
Step 4
Cook eggs. Separate the whites from the yolks. Cut the proteins into large cubes.
Step 5
We get the mussels from the marinade. Add eggs, bell peppers and tomatoes. We take ripe and sweet tomatoes.
Step 6
Add some olive oil and finely chopped herbs to the salad. Stir the salad and put it in the refrigerator until the guests arrive.
