Mussel salad with cucumbers

Light fishy flavor harmonizes perfectly with fresh cucumbers. This dish is perfect as a light snack, it is better to serve it chilled, with a fresh baguette or slightly toasted toast. It is preferable to use homemade mayonnaise with a delicate and balanced taste.

Ingredients:

  • 200 g fresh frozen mussels without shells;
  • 1 large fresh cucumber;
  • 4 feathers of green onions;
  • 2 eggs;
  • 1, 5 Art. l. mayonnaise;
  • a few sprigs of dill;
  • green lettuce leaves;
  • salt;
  • ground black pepper;
  • half a lime for decoration.

Boil eggs and cool in water. Blanch the mussels in salted boiling water for several minutes, put in a colander and cool. Cut the eggs and put in a bowl, grate the cucumber on a coarse grater and squeeze lightly with your hands. Chop the dill and green onions. Mix all the ingredients, add mayonnaise and ground black pepper, mix well.

Put the washed and dried lettuce leaves on a dish. Place a slide of lettuce on top, put mussels around the edges. Garnish with thin lime slices and fresh dill.

Gourmet pickled mussel appetizer

For salads, you can use not only fresh, but also pickled mussels. They have a brighter taste and go well with vegetables.

Ingredients:

  • 200 g pickled mussels;
  • 2 eggs;
  • 100 g pitted green olives;
  • 2 tbsp. l. mayonnaise;
  • 10 pieces of cherry tomatoes;
  • 1 small red onion;
  • a few sprigs of parsley.

Boil the eggs, cool, cut into cubes and put in a bowl. Add tomato halves, chopped parsley, chopped olives, and thin onion half rings. Drain the liquid from the jar of mussels, add the seafood to the rest of the ingredients. Add mayonnaise, stir. The salad can be served in tartlets, it looks very nice.

Salad with mussels and bell peppers

The mouthwatering food can be served as an appetizer or as a main course for a light dinner. Thanks to the multi-colored sweet pepper, it looks very impressive. The recipe is very simple, a delicious salad is prepared in just 10 minutes.

Ingredients:

  • 200 g of ready-made mussels in oil;
  • green lettuce leaves;
  • 1 small red onion;
  • 1 yellow bell pepper;
  • 1 red bell pepper;
  • salt;
  • freshly squeezed lemon juice;
  • ground black pepper.

Drain the oil from the jar of mussels, put the seafood in a bowl. Wash and dry the salad. Cut the onion into thin rings. To fight off bitterness, onions can be doused with boiling water.

Peel sweet peppers from seeds, remove stalks. Cut the pulp into strips, and then into neat squares. Chop the parsley. Add bell peppers, herbs and onions to the mussels, lightly salt, mix well. If the salad is dry, add a little mussel oil.

Cover the dish with lettuce leaves, place a mixture of vegetables and mussels on top. Drizzle with lemon juice and sprinkle with freshly ground black pepper. Serve the salad with dried white bread and well chilled wine.
