For some reason, the generally accepted opinion is that a delicious soup is certainly a rich fatty meat broth in the base and, as an addition, boiled vegetables. Without meat broth, the soup can be neither tasty, nor aromatic, nor satisfying. However, this opinion is erroneous.

  • - vegetable oil - 3 tablespoons
  • - flour - 200 g
  • - salt - to taste
  • - water - 70 ml
  • Lean cabbage soup.
  • - finely chopped cabbage - 2 cups
  • - potatoes - 5 - 6 pieces
  • - mung bean - 0.5 cups
  • - vegetable oil - 3 tbsp.
  • - water - 1.5 l
  • - carrots - 1 pc
  • - salt, spices - to taste
  • Potato soup with mushrooms.
  • - champignons - 100 g
  • - potatoes - 6 pieces
  • - greens - to taste
  • - salt, black pepper - to taste
  • - vegetable oil - 2 tablespoons
  • Spicy milk soup with tofu.
  • coconut milk - 150 ml
  • green buckwheat (sprouts) - 2 - 3 tbsp.
  • almond kernels - 0.25 cups
  • fresh hot peppers - 0.5 pods
  • garlic - 3 cloves
  • greens (cilantro) - to taste
  • sea salt, spices (for example, sumac) - to taste
  • lemon - 1 slice
  • tofu cheese - 50 g
  • olives - 2-3 pcs per serving

Instructions

Step 1

Soup with farfels.

The first step is to prepare all the ingredients for making the farfl soup. From flour and water with a pinch of salt, knead a tough dough, grate it on a coarse grater, not forgetting to dip it in flour more often. The resulting pieces of dough - farfl - sift to remove the dry flour, then dry at the lowest temperature in the oven for an hour or an hour and a half.

Chop the peeled carrots with a coarse grater. Peel and chop the potatoes as usual for soup. In a cauldron or saucepan with a thick bottom, heat the vegetable oil, put the carrots and simmer, covered with a lid, over low heat for about 5 minutes. Then add the potatoes. Simmer for about 3 more minutes. Pour in water and add salt and spices. When the water boils, add as much farfl as you need. It could be

half or a whole glass of pasta.

Stir the soup well and cook for another ten minutes. Now remove the pan from the heat and let the soup sit for 5 to 10 minutes.

Step 2

Lean cabbage soup.

Pour oil into a cauldron or a thick-walled saucepan, put cabbage, peeled and coarsely grated carrots, simmer for a few minutes, stirring occasionally.

Put the washed mung bean, stir and simmer everything together for a couple of minutes. Add salt and spices, add half the water, bring to a boil and cook for 20 minutes. When the mung bean is tender but not quite cooked, add the peeled diced potatoes.

Pour in the remaining water. Cook for 10 to 15 minutes until the mung bean is completely cooked and the potatoes are tender.

Step 3

Potato soup with mushrooms.

Peel the potatoes, cut into pieces, boil, pouring hot water, until cooked. Rub the potatoes, adding the potato broth to create a puree soup. Salt to taste.

Simmer the sliced mushrooms separately in oil, season with salt and pepper to taste.

Pour the soup into bowls, add the stewed mushrooms and sprinkle with chopped herbs.

Step 4

Spicy milk soup with tofu.

Buckwheat sprouts, almonds, garlic, lemon and chili peppers (leave a few rings for decoration), pour coconut milk into salt and sumac and rub with a blender.

Pour the soup into graters, put olives and peppers, diced tofu, chopped cilantro into each one. This soup does not need to be cooked and is suitable for raw foodists.
