Step 1

Defrost and rinse milk before cooking. The size of the milk depends on the size of the fish itself, from which they were extracted, so if they seem too large, cut them into portions. To improve the taste, pre-marinate the milk in a mixture of soy sauce, black pepper and dry herbs for 1.5-2 hours.

Step 2

Then prepare a batter for which you beat eggs with mineral water. You can use ordinary water, but on the basis of carbonated batter it turns out to be more delicate. Beat it until smooth with a mixer or a regular fork, then add salt and flour. The amount of flour should be such that the consistency of the batter resembles thick sour cream. If it is too liquid, it will drain from the milk before frying without forming a crust. An overly thick batter does not run, but it tastes too dry when finished.

Step 3

Before preparing salmon milk, put a frying pan on the fire, pour in vegetable oil and heat it to high temperatures. Dip each milk in batter and put in hot butter. If the pan is not hot enough, the batter will simply spread. After frying over high heat on one side, turn the milk over to the other side. After that, reduce the heat and fry the dish for 10-15 minutes until tender.
