Instructions

Step 1

Place the potatoes in a saucepan, peeled beforehand, and cover with plenty of salted water. Put on fire and cook until vegetables are completely cooked. As soon as this happens, drain the unnecessary water, dry the potatoes a little by placing on a paper towel, and chop either with a sieve or on the finest grater.

Step 2

Add raw egg yolks to the chopped potato mass. Season the mixture with salt and pepper to your liking. Mix everything until smooth, add wheat flour there. Stir again. As a result, you should have a fairly soft and elastic dough for potato brushwood.

Step 3

Put the egg whites in a separate bowl and beat thoroughly until they turn into a rather thick white foam.

Step 4

Gradually add the resulting thick mass to the potato dough. Mix everything gently until smooth.

After sprinkling the work surface with wheat flour, put the finished dough on it and roll it out with a rolling pin so that the thickness does not exceed 3-4 millimeters. From the resulting layer, carefully cut out the figures in the form of rhombuses. Make a small notch in the center of each diamond and insert the edges of the shape into it.

Pour the deep-frying oil into a saucepan, put the potato brush in it and cook it, frying on each side, until golden brown.
