Chicken "Teriyaki" is a national Japanese dish with a spicy taste, traditional for this country. It is made with soy sauce and sake. This is a great alternative to regular fried chicken.
Teriyaki chicken sauce
Ingredients:
- sake - 100 ml;
- mirin - 100 ml;
- soy sauce (good quality) - 100 ml;
- honey (can be replaced with brown sugar) - 1 tablespoon.
You need to mix mirin, sake and soy sauce. These ingredients must be warmed up in a water bath.
For the spice, you can pour dry spices, such as ground ginger, into the Teriyaki.
After the sauce has completely evaporated, add honey to it, while stirring constantly. You should get a liquid that resembles a thick syrup in consistency. It is better to prepare the Teriyaki chicken sauce in advance. Store it in the refrigerator by pouring it into a tightly closed glass container.
Chicken "Teriyaki"
Ingredients:
- chicken (white meat) - 1 kilogram;
- vegetable oil - 4 tablespoons;
- starch - 1 teaspoon;
- ginger - 2 teaspoons;
- garlic - 1 clove;
- chili pepper - to taste;
- Teriyaki sauce - to taste.
The chicken should be cut into small cubes and marinated in the sauce for about one hour. Then you need to place the meat in a colander, wash, let the water drain and dry a little with napkins.
Traditionally, the Teriyaki chicken is cut into small pieces so that it can be eaten with chopsticks. In addition, the meat will cook better in this form.
The chicken should be evenly fried on all sides with vegetable oil over high heat in a cast iron skillet (or other thick-walled dish). It is better to lay out the pieces with the sandpaper down, otherwise they will burn and stick. Cook the chicken until golden brown. But the meat should remain juicy inside, so it is important not to overdry the dish.
Then add chopped garlic, chili and ginger to it. When the chicken is well done, remove it from the pan and drain the oil. Instead, add Teriyaki sauce and bring the liquid to a boil.
After that, the pieces of meat must be put back into the pan and simmer, periodically turning over with a spatula. The chicken should be well saturated. To make the sauce thicker, you need to add starch diluted with water to it. If the dish seems too sweet, you can dilute it with a little rice vinegar.
To preserve the crispy skin of the chicken, it's best to thicken the sauce separately, then water it over the meat.
How to Serve Teriyaki Spicy Chicken?
According to tradition, spicy chicken is placed on the leaves of Peking cabbage, garnished with vegetables. Garnish (noodles or rice mixed with sesame seeds) is served separately. You can also add pickled onions, ginger, or other Japanese foods. Full enjoyment of chicken with Teriyaki sauce will allow plum wine or sake, which are ideal for this dish.
