Usually cakes are baked for home celebrations or special occasions. To surprise guests, these desserts tend to have complex recipes with a lot of ingredients. But sometimes you want to pamper your loved ones just like that and make a cake for tea drinking with your family. For this, a simple baking recipe is suitable, which does not take a lot of time to cook.
Curd cake recipe
This homemade cake is very easy to make and delicious. He will surely be to the taste of loved ones, and will perfectly brighten up evening tea or Sunday lunch, if suddenly someone accidentally ran to visit. To prepare it, you will need the following products:
- 200 g butter or margarine;
- 3 yolks;
- 1 glass of granulated sugar;
- 2 ½ cups wheat flour.
Prepare the dough. To do this, grind 3 egg yolks with granulated sugar until white. Add softened butter or margarine, continuing to grind the ingredients. Then add 2 cups flour and mix everything. Add the remaining flour gradually, in a tablespoon, kneading the dough well. It should be soft.
Make 2 cakes out of the prepared dough, for which grease a refractory mold with margarine and evenly knead half of the dough with your hand along the bottom of the mold. Bake the crust in the oven over medium heat. When the crust is browned, remove it from the oven and transfer it to a platter. Bake a second crust from the remaining half of the dough.
Recipe for filling for curd cake
To make a curd filling for a cake, you need to take:
- 400 g of cottage cheese;
- ¼ glass of granulated sugar;
- 1 yolk;
- vanillin;
- 4 squirrels;
- ½ cup shelled walnuts;
- a handful of raisins.
Rub the curd through a sieve or colander with small holes. Mash one yolk with granulated sugar. Put cottage cheese, vanillin, washed and dried pitted raisins, chopped walnut kernels in it and mix everything thoroughly. Whisk 4 yolks into a cool foam and carefully combine them with the curd mass - the filling for the cake is ready.
Place half or a little more of the cooked curd mass on the chilled crust. Cover with a second crust and add the remaining filling. Sprinkle nut crumbs or chopped biscuits on top of the cake.
You can put the whole curd filling between the cakes, and decorate the surface of the cake with a specially prepared cream, for which you will need:
- 1 egg;
- 4-5 tsp granulated sugar;
- 30-50 g of butter;
- 1 tsp. cocoa powder.
Separate the egg yolk from the protein. In a tall cup or glass, carefully grind the egg yolk with granulated sugar until it is white. Remove the butter from the refrigerator in advance so that it has time to soften. Add soft butter to the yolk mixture, add cocoa powder, which can be replaced with vanilla if desired. Rub everything well until smooth.
Make a cornet out of thick paper and use it to apply a creamy pattern to the surface of the cake. Whisk the protein with a little sugar into a stiff foam. Use a small spoon to form small "snowballs" from the protein foam and spread them on the surface of the cake. Around the "snowballs" make an additional pattern with cream.
