Ingredients:

  • Semolina - 1 tbsp.
  • Sugar - 1/3 tbsp.
  • Kefir - 1 tbsp.
  • Soda - 1 tsp
  • Kerob - 4 tbsp. l.
  • Raisins - 1/3 tbsp.
  • Orange zest - 1 tsp.
  • Cinnamon, cardamom - to taste
  • Vegetable oil - 70 ml

Preparation

First, rinse well and soak the raisins in purified water for 15 minutes.

Mix in a deep bowl all the bulk ingredients - half a glass of sugar, a glass of semolina, a teaspoon of baking soda, three or four tablespoons of keroba, spices. It is best to use spices whole-ground, so the manna will be more aromatic. For example, grate some whole cinnamon on a grater, or crush a few green cardamom seeds in a mortar. If you don't have whole spices, use any ground spices suitable for sweet baked goods. For aroma and citrus flavor, you can use finely grated orange or tangerine zest.

Kefir is best used at room temperature. Stir all dry ingredients thoroughly, rub vegetable oil into them. Then pour in one glass of kefir. Leave the semolina to soften and swell for 15 minutes. But no more, so that the effect of the soda does not end and the manna rises in the oven.

After 15 minutes, set the oven to heat up to 180 C. Meanwhile, rinse the raisins again, mix them with the bulk. Lubricate the mold with oil, pour everything you get into it. Bake for 30-40 minutes. Check the readiness of the manna with a dry match or a toothpick. Pierce the manna with a match, if the match remains dry, then the manna is ready.
