  • - vinegar - 1.l.
  • - vegetable oil - 50 ml
  • - water - 200 ml
  • - salt - 0.5 tsp
  • For gravy:
  • - potatoes - 0.5 kg
  • - meat, tomatoes, carrots - optional
  • - salt, spices - to taste.
  • For frying:
  • - vegetable oil - 100 ml.
  • For lubrication:
  • - vegetable or butter - 50 g

Step 1

Take premium wheat flour, mix with salt, sift into a bowl with a slide, make a depression on top, pour in vegetable oil, vinegar, start kneading the dough and gradually pour in water until a patchy soft dough is obtained. Dust the table with flour and lay out the dough, knead with your hands so that it stops sticking to your hands. This may require some flour. Cover the dough with a bowl and let sit for 30 minutes.

In the meantime, prepare food for the gravy. There are a lot of options. You can make meat or vegetarian gravy, or you can simply stew the dumplings along with the potatoes. If you use meat, it must be stewed in advance, then add carrots, potatoes, simmer until half cooked, add separately fried tomato, previously grated on a fine grater, and pour in about 300 ml of water, bring to a boil and remove from heat.

If only potatoes are used, they can be peeled, cut into strips and boiled until half cooked in a little water.

Step 3

Roll out the dough into one layer or divide into parts, as convenient. Roll out the dough no more than 3 mm thick. Brush the entire surface of the dough with vegetable or melted butter. Now roll the dough into a tight roll and cut into 2 cm wide pieces.

Step 4

Fry the resulting rolls in vegetable oil until golden brown. Fry in portions, carefully placing the rolls one at a time in a single layer in the pan, leaving sufficient space between the pieces. Put the fried dumplings in a dry saucepan or bowl.

Step 5

When all the dumplings are fried, transfer them to a saucepan with gravy, pour hot water so that the dumplings are completely covered with water. Bring to a boil, season with salt and pepper, and cook together over low heat for about 10 minutes.

Step 6

Crimean dumplings are served both as the first and as the second dish.
