- –Young zucchini (1 pc.);
- –Tomatoes (2 pcs.);
- –Balsamic vinegar (5-7 ml);
- –Oregano (3 g);

Instructions
Step 1
First you need to prepare the vegetable mixture. To do this, rinse the carrots, cut into thin slices. Zucchini should also be rinsed from external contamination and chopped into cubes. Cut the onion into thin half rings. Mix all vegetables in a bowl. Salt.
Step 2
Place the tomatoes in a cup and cover with boiling water, after 5-7 minutes, remove the cracked skin and chop. Add the resulting mixture to the rest of the vegetables.
Step 3
Defrost the mackerel carcass, remove the entrails, cut off the head and rinse the inside. Pour balsamic vinegar into a cup, add lemon juice, oregano and salt. Whisk. Spread the marinade over the fish on both sides and inside the belly. Leave to marinate for 15-20 minutes.
Step 4
Take a baking bag. Place half of the vegetable mixture on the bottom. Place the rest of the vegetables inside the belly of the mackerel. Place the fish on a vegetable “pillow”. Secure the bag at the top with a special clip. Make a couple of holes in the bag with a knife and place in the oven, which must be preheated to a temperature of 160-190 degrees. When the fish is done, carefully open the bag, place the vegetables on a flat plate and place the mackerel on top.
