This is the simplest recipe for a delicious, satisfying and at the same time light Italian dish called risotto. He will especially appeal to those who love treats with seafood and spices.
It is necessary
- - 1 glass of rice;
- - 300 g of peeled mussels;
- - the head of an onion;
- - carrot;
- - olive oil;
- - 1 teaspoon of curry;
- - 2 cups vegetable broth;
- - salt and black pepper to taste;
- - parsley.
Instructions
Step 1
Peel and finely chop the onions and carrots. Defrost mussels at room temperature, if necessary. Rinse the rice 5-6 times in cold water.
Step 2
Heat the olive oil in a heavy-bottomed skillet and fry the onions and carrots in it. Then add the mussels and cook for about a minute. After the allotted time, put the rice in the pan, stir and fry a little.
Step 3
Add some water and curry to the skillet and season with salt to taste. When the liquid is completely absorbed, add some more water - and so on until the rice becomes soft. Arrange the finished risotto on plates, garnish with herbs and serve with white wine.
