Flavored pea soup with smoked meats not only satisfies the appetite, but also warms, so it is recommended to cook it in winter. Such a dish, although not dietary, is still healthy due to the addition of legumes and vegetables. In addition, their presence successfully compensates for the sharp, rich taste of smoked meat, making the perfect bouquet of food.
It is necessary
- For 3 liters of soup:
- - 250 g smoked brisket;
- - 300 g smoked ribs;
- - 250 g of split peas;
- - 1 onion;
- - 1 carrot;
- - 4 medium potatoes;
- - 2 bay leaves;
- - 3 sprigs of parsley;
- - salt;
- - vegetable oil.
Instructions
Step 1
Divide the ribs into bones, pour 3 L of water into a medium saucepan and heat over high heat. Bring the liquid to a boil and reduce the temperature. Boil the ribs for 35-40 minutes, until the meat is tender and starts to come off easily from the bones.
Step 2
Rinse and soak the peas in cold water for half an hour. If you use whole dry peas and not split peas, soak them for at least 3 hours. This is necessary not only to make the beans cook faster, but also to give the whole dish a special aftertaste with a delicate nutty touch.
Step 3
Prepare a vegetable fry. Peel the onion, cut it into small cubes and fry in hot vegetable oil for 2 minutes over medium heat. Grate the carrots and add them to the onions. Sauté the vegetables for another 5 minutes.
Step 4
Remove the cooked ribs from the broth and place them on a wide plate or tray to speed up the cooling. Separate the meat from the bones and chop it into small pieces with a knife.
Step 5
Transfer the prepared peas to a colander and shake a little to remove all the liquid. Transfer the beans to the smoked broth and cook for half an hour on medium heat, uncovered.
Step 6
Peel the potatoes, cut them into slices or sticks and add to the peas. After 5 minutes, put the vegetable frying and meat from the ribs there.
Step 7
Cut the brisket into slices or cubes and also send to the saucepan. It will be even tastier if you fry it lightly beforehand. Cook the soup until the potatoes are tender, about 15-20 minutes.
Step 8
Toss bay leaves and chopped parsley into a saucepan a few minutes before cooking ends. Add salt to the dish if necessary, but do not be too zealous, because smoked meats already contain a lot of salt.
Step 9
Pour the soup into bowls and serve with your favorite bread, croutons or croutons.
