Pastry "Korzinochki" has long won the hearts of those with a sweet tooth, but the filling of this delicious delicacy can be completely different. In summer, when a lot of berries appear, you can make a very tasty berry filling. The filling for "berry baskets" is very simple and tasty.
It is necessary
- - 350 g of cottage cheese
- - 150 g strawberries
- - 150 g black currant
- - 150 g red currant
- - 50 g blueberries
- - 220 g butter
- - 2, 5 tbsp. flour
- - 150-200 g sugar
- - 2 tbsp. l. sour cream
- - 1 tsp. baking powder
- - 1 egg
- - 1 bag of jelly
Instructions
Step 1
Freeze the butter very well, then remove from the freezer and chop into squares. Sift flour, add to butter and grind everything into small crumbs, this can be done on a grater.
Step 2
Put baking powder in sour cream, mix everything thoroughly, and then add to the butter-flour mixture, knead the dough very quickly, but not much, so that you just put everything together. Put the resulting dough for the "Basket" cake in a bowl, wrap with cling film and refrigerate for 30 minutes.
Step 3
Now prepare the curd filling for the "berry baskets". To do this, beat warm eggs with sugar until it is completely dissolved. Add cottage cheese to the egg mixture, beat the whole mass again.
Step 4
Turn the oven 180-200 degrees to preheat. While the oven is heating up, remove the dough from the refrigerator, roll it into a thin layer, then take the round molds and cut the circles along them. Put the dough into the mold, press it to the bottom and sides. Pierce the dough for "baskets" with a fork in several places.
Step 5
Put some curd filling inside the "baskets", then put them in the oven for 20 minutes.
Step 6
Rinse the berries, cut the strawberries into pieces. Put the berries on the finished base, fill them with the finished jelly and put in a cold place until the jelly hardens. "Berry baskets" are ready.
