Blueberry cheesecake turns out to be very aromatic and tasty. The finished dessert has an amazing appearance; it can even be served on a festive table. Serve cheesecake with dessert drinks.
It is necessary
- For twelve servings:
- - 600 g of cottage cheese;
- - 250 g flour;
- - 150 g butter;
- - 150 g blueberries;
- - 100 g of potato starch;
- - 5 eggs;
- - 2 teaspoons of vanilla sugar, baking powder;
- - icing sugar, butter.
Instructions
Step 1
Mash 150 g softened butter with 125 g sugar and vanilla sugar, add 1 egg, stir. Add baking powder and sifted flour, knead to a homogeneous dough, it should not turn out very steep. Place the dough in a greased baking dish and form the sides. Refrigerate for half an hour.
Step 2
For the filling, divide the remaining eggs into yolks and whites. Mash the yolks with the remaining sugar, whisk the whites until fluffy with a pinch of salt. Add pounded egg yolks to the curd, mix well until smooth. Add starch, mix again. Add whipped egg whites, stir gently with a spatula. Put the curd filling on the dough, flatten.
Step 3
Set aside some whole blueberries to garnish the future cheesecake, mix the remaining blueberries with 1 tbsp. spoon of sugar, beat with a blender until smooth. Add 1 tbsp. spoon of starch, mix. Make small indentations in the curd mass, put the berry mass in them, make patterns with a toothpick. Put in the oven for 1 hour, cook at 180 degrees.
Step 4
Cool the finished cheesecake with blueberries, remove from the mold, garnish with powdered sugar and decorate with the delayed blueberries.
