A curd cheesecake with blackberries is prepared in two hours. But this dessert is worth spending your time on. By the way, instead of blackberries, you can take other berries or fruits - it all depends on your preferences.
It is necessary
- For eight servings:
- - soft fat-free cottage cheese - 500 g;
- - shortbread cookies - 300 g;
- - natural yogurt - 150 g;
- - butter - 130 g;
- - sugar - 100 g;
- - lemons - 50 g;
- - two chicken eggs;
- - blackberries - 2 glasses;
- - strawberries - 1 glass;
- - vanilla sugar - 1 tbsp. the spoon;
- - a pinch of salt.
Instructions
Step 1
Grind shortbread cookies into crumbs. Melt butter, mix with cookies. Put the crumbs in a split form, greased with butter, Tamp down more tightly with a spoon, put in the refrigerator.
Step 2
Remove the zest from half of the lemons, squeeze the juice from half of the lemon, scroll the cottage cheese in a blender until smooth.
Step 3
Put the cottage cheese in a deep bowl, add natural yogurt, sugar, a pinch of salt, vanillin. Mix the curd mass with a mixer until smooth. Add lemon zest and juice, mix again. Add eggs one at a time.
Step 4
Pour the resulting curd cream into a mold, smooth. Bake the curd cake in a bain-marie. To do this, pour boiling water into a large baking sheet, put a cake tin there. Cook for one hour at 170 degrees.
Step 5
Cool the resulting curd cheesecake, put in the refrigerator for four hours. Grind half the blackberries and strawberries in a blender. Place on a pie, spread over the surface. Garnish the finished cake with the remaining blackberries. Enjoy your tea!
