What a festive table without the usual Olivier salad? In the midst of Orthodox fasting, it turns out, you can indulge in the pleasure of eating your favorite dish. A salad prepared without the use of meat, eggs and classic mayonnaise turns out to be no less tasty and much more healthy than the original.

It is necessary

  • - turnips - 2 pieces
  • - celery root - 20 - 30 g
  • - pumpkin - 20 - 30 g
  • - green onions - a few feathers
  • - mung bean - 2 tbsp.
  • - fresh cucumber - 1 piece
  • - sunflower seeds - 1 glass
  • - lemon juice, salt, black pepper - to taste
  • - ground turmeric - 1/3 tsp
  • - vegetable oil - 25 - 50 ml
  • - water - 0.5 - 1 glass

Instructions

Step 1

We begin preparing the salad 12 hours before serving, since we will use mung bean sprouts in the recipe. In order to get them, we wash dry mung bean from dust, fill with cold water so that the beans are completely covered. Leave the mung bean for 3-4 hours in a warm place.

Drain the water and once again rinse the beans under running water. Leave in a warm place, covering the container with a lid or cling film. After a few hours, the first shoots will appear, so the mung bean can be safely left to germinate overnight.

Step 2

Peel a small turnip, rub it on a coarse grater. Let's do the same with celery root and pumpkin. Grate the cucumber on a coarse grater, but it should not be peeled. Finely chop the green onion feathers. Mix everything, add mung bean along with sprouts. Season the salad with homemade mayonnaise made from sunflower seeds.

Step 3

To prepare mayonnaise, pour peeled raw seeds with cold water and leave for several hours so that the seeds become soft. Drain the water, put the seeds in the blender bowl, add the minimum amount of water specified in the recipe, add the minimum amount of oil. Already during the cooking process, it will be possible to add oil and water, achieving the desired thickness and fat content of the sauce - this is a matter of taste. Add salt, spices, lemon juice. Wipe everything together with a blender until a homogeneous cream is obtained.
