It is necessary

  • - 1050 g turkey fillet;
  • - 110 g of wheat flour;
  • - 550 ml of champagne;
  • - 130 ml of 20% cream;
  • - 60 g butter;
  • - salt, ground black pepper.

Instructions

Step 1

Rinse the turkey fillet, dry, rub with salt, pepper, and thoroughly roll in flour. Melt the butter in a frying pan and fry the turkey meat on both sides until golden brown.

Step 2

Pour champagne into a pan with turkey meat (it is better if it is brut), cover and simmer over low heat for an hour.

Step 3

Rinse the potatoes and pumpkin, peel, cut into small pieces and boil in salted water for about 35 minutes, then cool slightly.

Step 4

Grind ready-made vegetables with a blender, add some of the cream and butter to them, mix well.

Step 5

After the turkey fillet is braised, add the remaining cream and continue cooking for another 18 minutes.

Step 6

Serve the cooked turkey, pre-cut into portions, garnished with pumpkin puree and herbs.
