Rice is widely used in cooking, and not only side dishes are prepared from it, but also delicious desserts. I suggest making a rice casserole with vegetables out of it. This dish is very easy to prepare, and it also has an excellent delicate taste.
It is necessary
- - rice - 1/3 cup;
- - olive oil - 2 teaspoons;
- - small zucchini - 2 pcs.;
- - onion - 1 pc.;
- - egg - 3 pcs.;
- - grated hard cheese - 3/4 cup.
Instructions
Step 1
After thoroughly rinsing the cereal, pour it into a small saucepan and pour 2/3 cup of water, then place it on the stove. When the water boils, reduce heat to low and cook the rice for 10 minutes. After the time has passed, put it aside for a while, covering it with a lid.
Step 2
Pour the olive oil into a skillet and heat. Then fry the onions on it, finely chopping them beforehand. During this procedure, carefully monitor the vegetable - the onion should become transparent, and not overcooked.
Step 3
After rinsing the zucchini, grind them with a fine grater. If you don't have small ones, use one medium-sized squash. It is highly undesirable to use large fruits in a rice casserole, since they are not so tender.
Step 4
Combine cooked rice with the following ingredients: minced zucchini, raw chicken egg, half a glass of grated cheese, pepper and salt. Mix everything properly.
Step 5
Grease a baking dish with vegetable oil and cover with parchment paper. If you are using a glass or ceramic mold, then you do not need to do the latter. Place the rice mass in it and spread it over the entire surface. Sprinkle the rest of the grated cheese on top of the dish.
Step 6
Bake the dish in the oven at 180 degrees for 25-30 minutes. The rice casserole with zucchini is ready.
