Below are the recipes for the most, perhaps, simple batter options.
Beer batter. Beat 100 g of beer with a fork with one egg. Add a couple of tablespoons of warm water, beat again. Instead of water, you can add milk, if any; if not, then do not regret it - with water it is not worse. Now add 100 g of bread crumbs to the liquid. Salt to taste. A pinch of sugar. If you want a golden crust, feel free to add a quarter teaspoon of curry or turmeric. Thoroughly dip the fish slices in batter, fry with the lid closed over high heat. The process is rapid, do not leave the pan.
Step 2
Starch batter. Here will be an amazing crust - dense, crunchy, just a song. Mix 2 tablespoons, top, of starch with one tablespoon of corn flour (no corn flour - don't despair, improvise - add wheat flour, rye, in general, which is in the house). There are also two finely chopped cloves of garlic. Salt pepper. Now slowly pour warm water, stirring constantly (this is important), it is better to stir with a fork. Pour in enough water to get the consistency of a batter. Then everything is the same - dip the fish in batter, fry in oil over high heat.
Ginger batter. This is such a batter, in which the fish itself does not need to be seasoned with anything - it has such a rich taste. Mix two tablespoons of thick sour cream with half a glass of water. Add 1/2 tablespoon grated ginger and three finely chopped garlic cloves. Soy sauce - 1 tablespoon If you are not afraid of spicy food, add chili pepper (without seeds), finely chopped, in a batter. Mix everything thoroughly, put the fish in batter, send it to a hot frying pan to fry. The taste is very unusual, spicy, and even refreshing because of the ginger.
Step 3
Wine batter. Mix 100 g of white wine with two tablespoons of water, one tablespoon of olive oil and the juice of half a lemon. Add an egg there, beat everything well with a fork. Now add salt, pepper, dried basil and stir. Add flour to make a dough with the consistency of liquid sour cream. Introduce the fish with batter, send it under the lid. This batter is very delicate; despite the presence of alcohol in the recipe, such fish can be safely given to children - when frying, the alcohol will evaporate, leaving only a slight aroma.
