Step 1
Take one glass of flour and sift it through a fine sieve. This must be done in order for the batter to turn out to be airy. Add a little salt and sugar to the flour prepared in this way. Also add black pepper and dried crushed ginger.

Pour flour with additives into a dish in a small slide. Make a depression in the middle of this slide. Pour in half a glass of mineral water without additives, start kneading the dough.

Take two eggs, separate the whites from the yolks and place them in separate dishes. Put the plate with proteins in the refrigerator. Add the yolks to the future batter and mix well until your dough resembles thick sour cream in its consistency.
Step 4
Then take out the dishes with chilled proteins, add a pinch of salt to them and beat everything thoroughly until you get a foam. Then pour the proteins prepared in this way into the dough and continue to knead. Add a tablespoon of vegetable oil.
Step 5
Let the cooked batter stand for about half an hour so that the flour has time to swell. Dip fish fillets in batter and fry in a preheated pan. The product will delight you with its excellent appearance and taste.
