Batter is a semi-liquid dough intended for dipping products in it before frying. There are many different recipes for making batter, for example, based on wheat, rye or rice flour, eggs, mineral water, kefir, milk, etc.
How to make a batter for fish in milk
- 300 ml of milk;
- three eggs;
- a teaspoon of vegetable oil;
- 150 grams of flour;
- salt (to taste).
Pour milk into a saucepan, put on fire and heat it slightly. Add egg yolks to warm milk (temperature should not exceed 40 degrees) and beat well. In a separate container, beat the whites into a fluffy foam, then carefully combine them with the dough and salt (at this stage, it is better not to use a mixer, otherwise the batter will be less fluffy when frying). How to make fish batter without eggs
- two tablespoons of flour;

Combine beer with flour in a deep bowl and beat thoroughly with a mixer. Salt and pepper the resulting mixture, add finely chopped herbs to it if desired. Beer in this batter perfectly emphasizes the taste of fish and gives it a little piquant bitterness.
How to make kefir fish batter
- 1/2 cup flour;
- two eggs;
- 200 ml of kefir;
- salt.
Pour kefir into a deep bowl, add eggs and beat thoroughly. Pour flour into the resulting mass, salt and beat again. The consistency of the batter should not be thinner than thick sour cream.
How to make a fish batter with mineral water
- a glass of flour;
- two eggs;
- salt, pepper (to taste);
- a teaspoon of vegetable oil;
- a glass of mineral water.
Separate the whites from the yolks. Pour flour into a bowl, add mineral water, two yolks, salt and pepper and mix everything. so that there are no lumps. Cover the resulting mass with foil and let stand for 20-30 minutes. Whisk the whites into a firm foam and mix them with the previously prepared dough. Mineral water batter is ready.
