    • water;
    • tempura flour;
    • egg;
    • cucumber;
    • crab meat;
    • Almette or Philadelphia cheese;

    • wasabi;
    • soy sauce;
    • pickled ginger.

Instructions

Step 1

Boil rice until tender. Add the dressing of rice vinegar, sugar and salt to it and mix well. While the rice is cooling, prepare the rest of the ingredients.

Cut the cucumbers into strips and pat dry with a paper towel to remove excess moisture. Finely chop the crab meat with a knife. Cut raw salmon or trout into thin strips.

Place the nori sheet, matte side up, on a bamboo mat. Spread the rice in an even layer, leave a strip on top. To prevent rice from sticking to your fingers, soak your hands in vinegar and water. Season the rice with wasabi, to do this, coat the strip in the place where you will spread the fish.

Place the cucumbers until the middle of the roll. Sprinkle them with crab meat. Put strips of fish in the middle, brush them with Almette or Philadelphia cheese. Prepare the batter: beat the egg, pour in a little ice water, mix well. Add tempura flour and whisk the batter. You should get a mixture of pancake dough consistency. Lumps are allowed, but it is important to beat the batter until air bubbles appear, then you will be able to cook rolls in batter like in a restaurant.

Roll up the roll by lightly pressing it down with a bamboo mat. Lubricate the free edge with vinegar and water and glue the roll. Cut it in half to make it easier to fry. Dip the roll in tempura flour. Then dip it in the batter.

Heat vegetable oil in a saucepan to make batter rolls. Place the rolls in boiling oil and fry quickly until golden brown. Allow excess oil to drain.
