Ripe bananas are peeled and mashed until puree. It is most convenient to do this with a blender, but you can use a simple fork, as ripe fruits are easily crumpled. Eggs are broken into a separate container, mixed with sugar and beaten until smooth. If you want to get fluffy muffins, it is recommended to beat the yolk and protein separately. First, grind the egg yolks with half the sugar to white. In this case, the volume of the mass should increase by 2 times. Whisk the whites into a strong foam, gradually adding the remaining sugar. It is recommended to introduce whipped proteins into the dough after adding flour.

In this case, it is impossible to delay the preparation of the dough, as the protein foam quickly loses its volume. It is also not recommended to use a mixer to mix ingredients. You will have to mix the dough manually.

The prepared puree is added to the sweet egg mixture and whisk is continued. Melt the butter over low heat, cool to room temperature and add to the egg-banana mixture.

Then, pre-sifted wheat flour, cocoa powder and soda are gradually introduced into the mass. You can use a special baking powder instead of baking soda. You should have a fairly thin batter with a uniform consistency.

The oven is heated to 220 ° C and the molds with the dough are set to the middle level. Bake muffins for 15-20 minutes until an appetizing crust forms. The readiness of the dessert is checked by piercing the central part of the baking with a wooden skewer or a match. If there are no lumps of raw dough stuck to the skewer, the baked goods can be removed from the oven.

It remains to decorate the dessert. This requires a bar of milk chocolate. The chocolate is rubbed on a coarse grater and melted in a water bath. The resulting mass is gently greased on the surface of each muffin. By the way, you can diversify the flavor of baked goods by adding a little ground cinnamon, vanilla sugar or grated nutmeg to the dough. You can also not add cocoa powder to the dough, but add chocolate, broken into small pieces.
