In the spring, vitamins are very lacking. There are a lot of them in cranberries, but many do not like them, as they are sour. Try to bake a fragrant cake with this wonderful berry, a tasty and healthy dish will come in handy for homemade tea.
It is necessary
- - 185 g of butter;
- - 1 tablespoon of orange zest;
- - 1.5 cups brown sugar;
- - 1 glass of dried cranberries;
- - 1 cup chopped nuts;
- - 1 glass of milk;
- - 1/3 cup orange juice;
- - 3 eggs;
- - 3 glasses of self-rising flour;
- - icing sugar.
Instructions
Step 1
Preheat oven to 180 degrees. Lightly oil the cake pan.
Step 2
Melt butter in a large saucepan over low heat. Grate the zest from the orange. Nuts (you can use pecans, walnuts or pine nuts), peel and chop.

Add brown sugar, zest, dried cranberries, and half of the nuts to the melted butter. Boil the mixture a little and remove from heat.
Step 4
Add milk, orange juice, eggs, and self-raising flour. Knead the dough and place in the prepared dish.
Step 5
Sprinkle the remaining nuts and powdered sugar over the dough. Place the muffin to bake in the oven for 1 hour and 15 minutes. You can check the readiness of the dish with a toothpick. Stick it in the cake, if there is any unbaked dough on it, keep the dish in the oven for a few more minutes.
Step 6
Turn off the oven and leave the cake in it for another 5-10 minutes. Then cool, sprinkle with powdered sugar sifted through a sieve and serve.
