Souvlaki is a meat dish originally from Greece. It is very similar to the usual kebab. The difference is in the cutting of meat and the marinade used.

It is necessary

  • - lean pork - 0.5 kg;
  • - lemon - 1 pc.;
  • - black, red pepper, basil, oregano - ½ tsp each;
  • - olive oil - 2 tablespoons;
  • - salt - ½ tsp;
  • - sunflower oil for frying - 2 tbsp.
  • for the sauce:
  • - Greek yogurt - 200 ml;
  • - pickled or pickled cucumbers - 3 pcs.;
  • - parsley - a bunch;
  • - salt and pepper to taste.

Instructions

Step 1

Souvlaki is made from lean pork meat. If you prefer a juicy product, use the pork neck or other fatty portion.

Step 2

Initially, rinse the selected piece of pork well with cold water. After drying, cut it into small pieces. They should not exceed 3x3 cm. Place the semi-finished product in a deep bowl.

Step 3

Wash the lemon, squeeze the juice out of it. For half a kilogram of meat, juice from half a lemon is enough. Leave the second part of the fruit for decoration. Pour the lemon juice over the pieces of pork. Marinate for at least 15 minutes, during which time the meat will become softer and more flavorful.

Step 4

Collect all the spices in one bowl, add olive oil. Do not oversalt the marinade, 0.5 teaspoon is enough for a certain portion. The spices in the marinade can be changed, but the oregano should remain unchanged.

Step 5

Toss the cooked spices and olive oil with the meat. Cover the entire composition, leave for 1.5-2 hours at room temperature.

Step 6

Take a moment to make tzatziki sauce (tzatziki). Pickled or pickled cucumbers, cut into small cubes. Rinse the parsley, dry and chop finely. Collect everything in one bowl. Add salt, pepper and thick natural yogurt. Mix everything and put it in a cold place, let it infuse.

Step 7

String pieces of meat on wooden sticks. Fry souvlaki in a skillet pre-heated with vegetable oil. Fry on all sides, the total cooking time is no more than 8 minutes.

Step 8

Serve souvlaki hot with chilled sauce, potatoes and vegetables.
