  • - 200 g of raisins;
  • - 5-6 g dry yeast;

  • - vanillin to taste;
  • - 100 g of icing sugar and confectionery sprinkles.

Step 1

First you need to prepare the dough. Mix lightly warmed milk with 1 tbsp. granulated sugar and 1/3 flour. Make sure that the temperature of the milk does not exceed 30 ° C, otherwise the yeast will simply boil. Add dry yeast to the mixture and mix again. Cover the dough with a towel or cling film and leave in a warm place for half an hour.

Step 2

When the dough increases in volume, it must be kneaded by stirring with a spoon. Now separate the yolks from the whites, mash them with sugar and vanilla and add to the dough together with 1/3 of the flour. Stir the dough again.

Step 3

Whisk the whites into a strong foam with a pinch of salt. Add the whipped egg whites to the dough and stir gently, then add the rest of the flour.

Step 4

Soften the butter in a water bath and add to the dough. After that, knead the cake dough well so that it does not stick to your hands. If the dough remains sticky, you can add a little more flour.

Step 5

Place the dough again in a warm place so that it approximately doubles in volume. The process usually takes 30 to 60 minutes. While the dough is fine, rinse and dry the raisins. Add the raisins to the dough when fine. After that, crush the dough with your hands and leave for another half hour.

Step 6

Grease a baking dish with butter and lay out the dough. The form must be filled in 1/3 of the volume. If you put a lot of dough, then when baking, the dish will turn out to be uneven and ugly. Let the dough come right in the tin before placing the dish in the oven. It will take 15-20 minutes.

Step 7

Bake the cake in a preheated oven for 45-50 minutes at 150 ° C. Please note that the baking time depends on the width and height of the mold. As soon as the cake turns golden on top, you can check its readiness with a wooden skewer.

Step 8

To decorate the cake, you need a protein glaze. To prepare it, beat 2 proteins with 100 g of powdered sugar in a pre-chilled bowl. As soon as the glaze becomes lush and keeps its shape well, it must be applied to the cake and sprinkled with decorative dressing.
