It is necessary

  • - 1 kg flour
  • - 11 g dry yeast
  • - 100 g sugar
  • - salt
  • - a glass of milk
  • - 2 glasses of kefir
  • - 2 eggs
  • - 100 g butter
  • - vanilla extract
  • For filling:
  • - 700 g peeled apples
  • - 200 g sugar
  • - 100 g butter
  • - 3 tbsp. l. honey
  • - 3 tbsp. l. starch
  • Streisel:
  • - 70 g flour
  • - 50 g icing sugar
  • - 70 g butter
  • - 1 bag of vanilla sugar
  • For lubrication - 1 egg

Instructions

Step 1

Cooking the dough: take a large bowl, pour flour into it, then dry yeast, sugar, salt, vanillin. Melt the butter and pour into the dough as well. Then add all the liquid ingredients: kefir, milk, eggs. Knead the dough for about 10 minutes until smooth. Do not be confused by its stickiness, do not clog the dough with excess flour, it is better to grease your hands with vegetable oil. It is better to knead the dough in the evening. The well-kneaded dough is transferred to a large saucepan and refrigerated overnight.

Step 2

Prepare the filling: the apples are washed, peeled, cut into small cubes. You can make your work easier by using a food processor. Cover the apples with sugar and mix everything. In a saucepan, butter is heated, then honey is added to it, everything is mixed. Put apples in a saucepan and cook for 15 minutes, stirring constantly. Apples are not worth overcooking. When they are almost ready, add the starch and, stirring, cook for another two minutes. The filling is cooled and placed in the refrigerator overnight.

Step 3

Cooking streusel: to make crumbs, cold butter is rubbed on a coarse grater, flour, vanilla sugar and powder are added to it. Everything is crumbled.

Step 4

We create cheesecakes: let the dough taken out of the refrigerator warm up for half an hour, then grease your hands with oil and divide it into equal pieces. It turns out about 20 pieces. The dough is rolled into balls, then crushed and laid out on a baking sheet covered with parchment. You need to place no more than 9-10 cheesecakes on the sheet and away from each other, otherwise they will stick together.

Step 5

The dough is covered with a napkin and left to rise for 20 minutes. The bottom of the glass is greased with oil and depressions for the filling are made with it in the cakes. The filling is folded into the grooves, the sides of the cheesecakes are smeared with a beaten egg and sprinkled with a streusel. For half an hour, everything is put in an oven preheated to 180 degrees.
