Step 1

Prepare the lobio base. Choose the same type of beans - different options have different cooking times. Sort dry beans and soak in cold water. The minimum soaking time is 6 hours (suitable for small grains). Coarse beans can be kept in water for 12 to 24 hours.

Step 2

After soaking, drain the water and sort the beans again, rejecting damaged beans. Rinse the remaining grains, fill with water so that it slightly covers the beans. Cook until soft - the water should be almost completely evaporated.

Step 3

Get busy preparing your lobio supplements. Chop the onion thinly, put it in a skillet with vegetable oil and fry until golden brown. Put the boiled hot beans in a frying pan and mix thoroughly so that the beans absorb the oil. Season with salt and fry for 3-4 minutes, stirring occasionally. Transfer the beans to a china or ceramic bowl.

Step 4

From the resulting base mixture, you can make lobio with nuts, tomatoes or cheese. For nut lobio, grind the kernels in a mortar along with garlic, red pepper and salt, add wine vinegar, finely chopped basil and dill, and dry spices - coriander seeds and saffron. Pour the mixture into the warm onion and spice beans and stir thoroughly.

Prepare lobio with tomatoes differently. Scald the tomatoes with boiling water, peel them off. Mash the tomatoes into puree and place in a bowl of beans. Add wine vinegar, cloves, coriander seeds, and finely chopped mint and celery.

Step 6

For lobio with cheese, you need any pickled variety. Soak it for an hour in cold water, grate and mix with red pepper, cloves and cinnamon. Dissolve the cheese mixture with a few tablespoons of the decoction from the beans and stir until the consistency of thick sour cream. Mix the beans with vinegar and combine with the cheese mass. Add finely chopped dill and cilantro.
