Step 1

Chop fresh cabbage finely, salt it and shake your hands so that the cabbage gives juice. Peel and grate the carrots. Finely chop the onion.

Step 2

Heat vegetable oil in a skillet. Place the onions, sauté until golden brown and add the carrots. Fry the onions and carrots for 2-3 minutes and pour the cabbage into the pan. With constant stirring, fry the vegetables for about five minutes, until the cabbage is soft and slightly golden in color.

Step 3

Chop fresh mushrooms finely. If you are preparing a filling from dry mushrooms, rinse them thoroughly and soak them for a couple of hours in cold water, and then cut them into small pieces.

Step 4

Heat vegetable oil in a pan and fry the mushrooms for 5-10 minutes. Combine them with toasted kale. Make sure that there is not too much oil in the filling.

Step 5

Sift flour into a large bowl. Break an egg into flour, add water and salt. Take cold water, you can cool it in advance in the refrigerator. The dough, kneaded in cold water, turns out to be more elastic and does not dry out longer.

Step 6

Knead the dough well until it stops sticking to your hands. The dough should be pretty steep. Roll out a thin layer with a rolling pin about 1.5-2 mm. For triangular dumplings, cut the dough into squares. And if you prefer semicircular dumplings, cut out circles on the dough using a thin glass.

Step 7

Place the filling in the center of the squares or circles and pinch the edges carefully. Make sure that the edges of the dumplings are not too thick, otherwise these places will not cook well and will be tasteless.

Step 8

Boil water in a large saucepan, season with salt, and place the dumplings in boiling water. Boil the dumplings for 5-7 minutes until they completely float to the surface. Remember to stir them while cooking so they don't stick together.

Step 9

Remove the dumplings from the saucepan with a slotted spoon, place in a plate and pour over the melted butter. Serve sour cream on the table with hot dumplings.
