Bell peppers can be red, yellow or green, this in no way depends on the ripeness of the fruit. There are also varieties that are different in shape. Some fruits have fleshy walls, and some are light piquant pungency, but they are all suitable for making salads.
Bell pepper and tomato salad
This salad is quick and easy to prepare. You only need a few minutes for it and the following products:
- sweet peppers - 5 pieces;
- tomatoes - 4-5 pieces;
- shallots - 1 head;
- sesame oil - 50 ml;
- ground black pepper;
- salt.
All vegetables must be peeled and rinsed, then dried. Bell peppers can be sliced, tomatoes can be sliced, shallots can be sliced. Put all the ingredients in a salad bowl, add salt, season with black pepper and pour over with sesame oil.
Roasted bell pepper salad
This is a warm salad, for the preparation of which you need to take:
- sweet pepper - 1 kg;
- garlic - 7-8 cloves;
- table vinegar - 1 tbsp. spoon;
- vegetable oil - 100 ml;
- sugar - ½ teaspoon.
Sweet peppers should be washed and dried. Heat oil in a cauldron and fry the peppers. Turn the peppers while roasting so they roast evenly. It is best to fry under the lid, this will shorten the processing time and the hot oil will not splatter. The fire should be moderate during the frying process.
Finished peppers should be placed in a plastic bag or sealed in a container with a lid to soften. After a few minutes, you can easily remove the tough skin from the softened peppers.
Peeled and chopped fruits should be placed in a salad bowl in one layer, salt on top and evenly distribute a layer of crushed garlic. Then repeat another layer of pepper and garlic. Then add the sauce to the vegetables. For the sauce, mix a tablespoon of vinegar, sugar and juice from fried peppers, mix everything and pour the mixture over the salad.
Gogoshar and cabbage salad
The salad according to this recipe can be prepared for immediate use, as well as in cans, for a longer period with storage in the refrigerator. The list of vegetables includes a special kind of peppers - gogoshary, they have a flattened shape with fleshy and sharp pulp. To prepare a salad with pepper, you will need the following products:
- cabbage - 700 grams;
- table vinegar - 100 ml;
- bell pepper - 1 kg;
- gogoshary - 1 kg;
- onions - 1 kg;
- carrots - 500 grams;
- sunflower oil - 200 ml;
- sugar - ½ cup;
- salt - 2 tsp.
Bell peppers and gogoshars must be washed, removed from the core with seeds and cut into strips. Peel and rinse the carrots, chop into strips as thin as possible. Rinse the cabbage, dry it and chop it with a special cabbage grater. Peel the onions, rinse and cut into half rings. Put all the vegetables in one container and gently mix the ingredients.
Then prepare the salad dressing. Dissolve the sugar and salt in vinegar (preferably apple cider) until completely dissolved, add oil, mix and pour the mixture over the salad. Stir and place the salad on a platter. Fresh vegetables will be a great side dish to any hot dish of meat, potatoes or as a separate snack.
If you want to keep such a salad for a long time, it should be laid out in scalded cans, tamped tightly and filled with dressing to the very edge, and then sealed with nylon lids. The shelf life of the salad in the refrigerator is up to six months.
