After a successful summer season, gardeners sometimes cannot cope with the harvest of vegetables. There are many recipes for delicious zucchini and squash marinades that you can make at home. The simplest and most delicious preparation is Uncle Bens from zucchini.

It is necessary

  • - 1 tbsp. tomato paste;
  • - 2 kg of tomatoes;
  • - 2 kg of bell pepper;
  • - 2 kg of zucchini;
  • - 1 glass of granulated sugar;
  • - 1 glass of sunflower oil;
  • - 1 liter of water;
  • - carrots 1.5 kg;
  • - onions 1, 5 kg;
  • - 3-4 medium sized garlic cloves;
  • - salt 1 tbsp;
  • - vinegar 70% - 1 tablespoon

Step 1

I would like to preserve useful vitamins, spending a minimum of time on it, but it is also important that the blanks are tasty and well stored. A rather simple recipe for the "Uncle Bens" salad from zucchini is offered. You can use it as a dressing in vegetable soups, a vitamin supplement for simple side dishes, as an appetizer for a festive table.

Step 2

First, you should prepare cans and metal lids. Jars should be glass, with a capacity of 0.5-0.7 liters. The smaller the volume of the cans, the better the workpieces will be preserved. Place the prepared jars on a clean towel.

Then you should start preparing vegetables. All necessary components, rinse thoroughly, dry with a towel and clean.

After that, you need to chop the vegetables. Zucchini are cut into cubes, tomato and pepper slices. Grate the carrots, cut the onion into half rings. Chop the garlic as well. You can use a garlic press.

Step 5

Pour water into a saucepan with a volume of 10 liters, dilute the tomato paste in it, add sugar, salt, vegetable oil and bring to a boil. The resulting mixture must be brought to a homogeneous state, waiting for the salt and sugar to dissolve.

The next step: pour the zucchini into a saucepan and simmer under the lid for 10 minutes, stirring constantly so that the vegetables do not burn. Then you need to add the bell pepper and simmer for another 10 minutes, stirring constantly.

Step 7

After that you need to add carrots, simmer again for 10 minutes. After that, add onion, garlic and peppercorns (3-4 pcs). For spicy food lovers, you can add 1-2 pods of hot peppers, cut into rings.

Step 8

Boil the whole mixture for another 10 minutes, add vinegar, mix and arrange in jars. After that, you need to roll up the salad with metal lids.

Step 9

To sterilize the jars, turn them over onto the lids and wrap them in a thick blanket or blanket for 24 hours. If done correctly, Zucchini Uncle Bens can be stored for 1-2 years without any problems. There are many other simple zucchini blanks, but this recipe is preferred by my family.
