  • Chickpeas - 150 g
  • Water - 300 ml
  • Cream - 100 ml
  • Vegetable oil
  • Salt, pepper (for soup) - to taste
  • Paprika, dried garlic, salt (for baked chickpeas) - to taste

Step 1

Cooking chickpeas. First, you need to soak it in cold water overnight (or at least 6 hours), drain and rinse the chickpeas, fill with new water and cook for an hour. Divide the finished chickpeas into two parts - one of them will go in a puree soup, the other for crispy chickpeas.

Step 2

To prepare crispy chickpeas, lay them on paper towels and dry. Next, mix salt, paprika and dried garlic in a separate bowl, sprinkle generously with chickpeas and mix thoroughly. Put the chickpeas on a baking parchment, bake for 30-35 minutes. at a temperature of 180 degrees, stirring occasionally.

Step 3

Finely chop the onion, three garlic on a fine grater (or pass through a press). Heat vegetable oil in a deep frying pan, fry the onion and garlic in it for 3-4 minutes.

Step 4

We clean and wash the potatoes. We cut it into cubes. Add potatoes along with 300 ml of boiling water to onions and garlic. Simmer the potatoes until soft (10-15 minutes).

Step 5

Put boiled chickpeas and potatoes in a blender bowl. Grind with an immersion blender until creamy. Put it back in the pan, add spices and cream, heat slightly (do not boil). If the soup is too thick, you can add boiling water. Stir everything thoroughly.

Step 6

Serve hot soup with baked chickpeas and fresh herbs.
