This dish can be a real table decoration, as well as a great snack or starter at a big party. Baked zucchini, with a spicy and savory taste that just melt in your mouth, are also a great option for those looking for weight and health.
It is necessary
- For two servings:
- - 2 small rounded zucchini
- - 1 teaspoon olive oil
- - 3 heads of garlic
- - 1 small onion, finely chopped
- - 50 g finely grated carrots
- - 1 teaspoon of cumin leaves
- - 1 teaspoon of oregano leaves
- - 2 canned artichoke hearts
- - 0.5 teaspoon lemon pulp
- - 0.5 teaspoon salt
- - 20 g finely chopped cashews
- - 25 grams of feta cheese, crumbled
- For serving:
- - arugula leaves
- - Cherry tomatoes
- - young radish
- - olive oil for dressing
Instructions
Step 1
Preheat oven to 150 degrees. Then cut off the tails of the courgettes. Grease a baking dish with olive oil, add the kucchini and garlic on top of it, and leave to bake for about 50 minutes.
Step 2
Remove the zucchini, chill them slightly, carefully remove the pulp from them using a spoon and place it on a separate plate. Do not turn off the oven.
Step 3
Heat oil in a skillet and lightly sauté the onions for 5 minutes. Add carrots, oregano, cook for another 5 minutes, until carrots are tender. Add the zucchini pulp and chopped artichokes and cook for another 2 minutes.
Step 4
Combine the lemon zest, salt, chopped nuts and add to the mixture in a skillet. Fill each zucchini tightly with this mixture, crumble the feta cheese on top, and leave in the oven for another 15-20 minutes (until the cheese turns golden).
Step 5
Serve cooked squash with arugula leaves, cherry tomatoes and radishes drizzled with olive oil.
