But both of them fill the filling with a mixture of eggs and cream, getting a sweet onion in a delicate custard. A pie similar to French quiche is also baked in Italy, but boiled onions are used in the filling there.

Quiche can be served hot or cold. It is no less tasty the next day when cooled or heated. The onions in this recipe can be substituted for a few leek stalks, but only the white portion should be taken.

German Onion Pie (Zwiebelkuchen) Peel the onion, halve each onion and cut into thin half rings. Cut the bacon into medium squares. Heat the oil in a skillet and fry the bacon pieces in it. Mix the filling with eggs, cream, nutmeg, salt and pepper and spread over the filling. Bake the cake for 40–45 minutes at 190 ° C.

Italian Quiche with Boiled Onions (Cipolle Lessate in Torta) Onions should be peeled and cut into half rings. Place the chopped onion in a saucepan, cover with three glasses of water, salt and cook until soft. Drain the boiled onion through a colander. Melt the butter in a skillet and sauté the onions until light golden brown over medium heat. Refrigerate.

Form the bottom and sides of the shortcrust pastry into a 20-25 cm baking dish. Use a fork to prick the bottom of the cake. Spread the fried onions evenly over the bottom. Mix eggs, cream and spices, add cheese and pour this mixture over the filling. Tilt the pan several times to distribute the filling evenly over the cake. Bake in an oven preheated to 190 ° C for 40-50 minutes. Serve warm with white wine.
