Pears make a great filling for fruit cakes and pies, especially if you add a delicious cream to them. Prepare a pear cake with two types of dough and a spicy cream filling - this dessert is quite suitable for a festive table.

- For shortcrust pastry:
- - 250 g flour;
- - 2 eggs;
- - 75 g of sugar;
- - 150 g butter;
- - salt.
- For biscuit:
- - 2 eggs;
- - 50 g flour;
- - 75 g of sugar;
- - 25 g of starch;
- - salt.
- For filling:
- - 5 ripe pears;
- - 0.25 liters of dry white wine;
- - 50 g of sugar;
- - 1 stick of cinnamon;
- - 0.5 lemons;
- - 4 yolks;
- - 0.25 liters of cream;
- - 15 g of gelatin.
Instructions
Step 1
Sift wheat flour and combine with softened butter and eggs. Add salt and sugar, knead the dough, and put it in the cold for half an hour. Then take out the dough and roll it into a round layer. Bake shortbread and chill on the board. Place it on the mold.
Step 2
Separate the yolks from the whites, beat the whites with salt into a strong foam. Mash the yolks with sugar and mix with the whites. Add flour mixed with starch. Stir the dough thoroughly and pour over the chilled shortbread. Place the mold back in the oven and bake until the sponge cake is browned. Remove the workpiece from the mold and refrigerate.
Step 3
Peel and cut ripe pears in half, removing the core. Pour the wine into a saucepan, add sugar, cinnamon and lemon, cut into wedges. Bring the mixture to a boil, place the pears in a saucepan and cook for 1-2 minutes. Remove the pears from the syrup, let the liquid drain. Set aside one half for decoration.
Step 4

Whisk in the cream and add portionwise to the cream. Pour the cream over the cake and smooth with a knife. Place the half of the pear left for decoration in the center and decorate it with mint leaves. Serve chilled pear cake.
