Celery is usually used as a spicy seasoning for salads and soups. However, it is possible to prepare independent dishes from its root and stalks. Celery side dishes go well with fried meat, fish, chicken, mushrooms.

- - 2 teaspoons of salt.
- For celery croquettes:
- - 350 g of celery;
- - 500 g of potatoes;
- - 8 pcs. eggs;
- - 40 g flour;
- - 60 g bread crumbs;
- - 100 g of sunflower oil;
- - 40 g of butter;
- - 1 teaspoon of salt.
Instructions
Step 1
Simmer celery with vegetables. To do this, peel and rinse the celery root along with the stem. Cut into strips 3 - 5 cm long. Grate the carrots on a coarse grater. Cut the onions into small cubes. Fry the carrots and onions a little in butter so that they do not brown.
Step 2
Wash the tomatoes, pour boiling water over them and carefully peel them off. Cut the fruit into large cubes. Place the sautéed carrots and onions, chopped celery and tomatoes in a saucepan or skillet. Pour vegetables with warm water or meat broth. Season with salt and pepper and place over medium heat. Simmer for about 1 hour.
Step 3
Bake the celery with milk sauce. Rinse the root and stalk of celery and cut into small cubes. Grease a frying pan with butter, put celery in it, cover with water or broth, cover and simmer over low heat for 15 - 20 minutes.
Step 4
Prepare a thick milk sauce. Lightly fry the flour in butter. Without removing from the heat, pour hot milk into the fried flour, stirring constantly. Season with salt and simmer for 5 to 10 minutes.
Step 5
Grate the cheese on a fine grater. Divide the cooked celery into single serving tins or in a large skillet. Pour in milk sauce. Sprinkle with cheese on top. Bake vegetables in the oven at 180 ° C for 10-15 minutes. When serving, sprinkle the finished garnish with melted butter.
Step 6
Make celery croquettes. Boil peeled celery with stalks in salted water for 20 - 25 minutes. Peel the potatoes and also boil until tender. Rub celery and potatoes through a sieve or whisk with a blender in mashed potatoes. Separate the whites from the yolks. Add yolks and butter to the vegetable puree. Roll small balls out of it, roll them in flour, brush with protein and bread in breadcrumbs. Deep-fry croquettes.
