Real Siberian dumplings have an extraordinary taste. They are juicy and very aromatic. At the same time, they do not lose their taste, even after long-term storage in the freezer.

Step 1
Take flour and sift it thoroughly through a fine sieve. Form a slide out of it on the table. Make a small deep indentation in it, into which you should drive 2 eggs. Start kneading the dough from edge to middle. Be sure to add a little water during this, which should be chilled. It is important that the liquid and eggs are not spread on the table, but kneaded in flour. The dough should be elastic and smooth. Be sure to wrap it with a damp towel, and then leave it in a cool place for 30 minutes. During this time, it will have time to lie down and become even more pliable for sculpting.
Step 2
Start cooking the minced meat. Be sure to take three types of meat - pork, beef and lamb. All this is first cut into medium pieces of 4-5 cm in size, and then scrolled in a meat grinder. The resulting minced meat is ground again. This must be done in order for the Siberian dumplings to be tender and juicy. Then the onion is peeled and cut into large pieces, which must be immediately sent to the meat grinder. After that, semolina is added to a bowl with minced meat, as well as pepper and salt to taste, and then all the components are thoroughly mixed.
Step 3
Take ice and break it into small pieces. Add it to the minced meat and mix everything gently. Put it in the freezer for 15 minutes. At this time, you need to take part of the dough and roll out a large circle from it. Next, take a raw egg and beat with a spoon. Using a brush, they need to lubricate the entire surface of the rolled dough. Cut out circles from it using a stack. Take out a small amount of meat and spread it directly onto the prepared dough, and then start sculpting dumplings. Thus, it is necessary to proceed until all the minced meat is consumed.
Step 4
Be sure to freeze the finished dumplings. Only then can they be cooked. To do this, you need to take a saucepan, pour water and bring it to a boil. Next, dumplings are thrown in alternately, slightly salted and stirred with a slotted spoon. You need to cook them for 12-15 minutes.
